Valentines Chocolate Truffles
BALL MIX
- 1 cup raw pecans
- 1 cup raw walnuts
- 1 Tbsp cacao powder
- 1/4 tsp sea salt
- 1/2 tsp ground cinnamon
- 10 whole pitted medjool dates
CHOCOLATE COATING
- 1 1/4 cups dairy-free dark chocolate
- 1 tsp coconut oil
TOPPING IDEAS
- Cocoa nibs, sea salt, pretzels, goji berries or crushed nuts.
INSTRUCTIONS
Food process the nuts until meal consistency. Remove and set aside.
Food process the dates, then add remaining ingredients including the nuts in small bits until dough is formed.
Roll into balls and freeze for 30 minutes.
In the meantime, melt chocolate over the stovetop or for 30 seconds in the microwave. Be careful not to overheat. Once melted, stir in coconut oil to help the chocolate thin. Remove the balls from the freezer and dip one at a time into the melted chocolate and place on a silicon baking mat.
Then top chocolate covered truffles with your favourite ingredients and enjoy.
Keep refrigerated.
